
Roasted Sweet Potatoes with Maple Syrup

Ingredients:
- 4 sweet potatoes, peeled and sliced into rounds
- 2 tablespoons olive oil
- 3 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- A handful of toasted pecans (for garnish)
Instructions:

Preheat the Oven:
- Preheat your oven to 200°C (400°F).

Prepare the Sweet Potatoes:
- In a large bowl, toss sweet potato rounds with olive oil, maple syrup , cinnamon, salt and pepper until well coated.

Roasting Sweet Potatoes:
- Spread the sweet potato rounds on a baking sheet lined with parchment paper in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, turning them halfway through cooking for even cooking.

Serve:
- Transfer roasted sweet potatoes to a serving platter. Garnish with toasted pecans.
- Serve hot as a side dish or as a vegetarian main course.
