Stuffed Jack-o'-Lantern Peppers
Ingredients:
- 4 large orange peppers
- 500 g minced meat (beef or chicken)
- 200 g cooked rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 carrot, diced
- 200 ml tomato sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil

Prepare the Peppers:
- Wash the peppers and cut off the tops to form a 'hat'. Remove the seeds and membranes.
- Use a small sharp knife to cut out jack-o'-lantern faces on the sides of the peppers. Get creative with the expressions!

Cook the Stuffing:
- In a frying pan, heat a little olive oil and sauté the onion and garlic until translucent.
- Add the ground meat and cook until golden brown.
- Add the diced zucchini and carrot, and continue cooking until tender.
- Add the cooked rice, tomato sauce, thyme, salt, and pepper. Mix well and simmer for a few minutes.

Stuffing the Peppers:
- Fill each hollowed-out pepper with the meat and rice mixture. Replace the 'hat' on each pepper.

Cooking:
- Preheat your oven to 180°C (350°F).
- Arrange the peppers in a baking dish. Pour a little water into the bottom of the dish to create steam.
- Cover with foil and bake for about 30-35 minutes. Remove the foil and continue baking for 10 minutes until the peppers are tender and the tops are lightly toasted.

- Serve the peppers hot, ideally with a small salad or roasted vegetables for a complete meal.
