Maple Syrup Tiramisu
Ingredients:

For the coffee-infused maple syrup:
- 120 ml of pure maple syrup
- 120 ml of hot water
- 2 tablespoons instant coffee or strong espresso

For the mascarpone mixture:
- 500 g mascarpone
- 3 large egg yolks
- 50 g caster sugar
- 1 teaspoon vanilla extract
- 240 ml of crème fraîche

- 200 g of sponge fingers
- Cocoa powder for dusting
- Chocolate chips or dark chocolate shavings for garnish
Instructions:

Prepare the Syrup :
- Dissolve the coffee in hot water, then mix with the maple syrup. Let cool to room temperature.

Prepare the Mascarpone Mixture:
- In a large bowl, beat the egg yolks and sugar until the mixture is smooth and pale.
- Add the mascarpone and vanilla, and continue beating until combined.
- In another bowl, whip the crème fraîche until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture to keep the mixture airy.

- Quickly dip the ladyfingers in the coffee-infused maple syrup, soaking them just enough so that they become moist without falling apart.
- Place a layer of soaked biscuits on the bottom of a serving dish.
